A Brown Donkey. On the other side of the broken bridge on Paddock Island. You need to use the bow emote to draw the donkey to you.

A Grey Donkey. Behind the wall near the food store at Goldspur Farm. You have to buy a lemon pie from the Stablebucks Cafe.
